Last Sunday afternoon my DH made scones for afternoon tea, which was good to have afternoon tea with family. This Sunday I made biscuits with my DD2. Four of us had nice afternoon tea together.
The recipe is from Be-Ro flour. Home Receipes. Rich Biscuits.
To make biscuits you need:
225g Self-Raising flour
100g caster sugar
100g butter
1/2 lemon, grated rind and juice
1 medium egg
If you want you can add 50g currants.
Heat oven to 180C, 350F, Gas Mark 4, Grease 2 baking trays or use baking sheets
Mix flour and sugar, rub in the fat
Add lemon rind, juice and add sufficient egg to make a soft dough
Roll out thinly and cut. Place on the baking trays and bake for about 15 minutes.
When cooled biscuits will finish in 15 minutes :)
